Series of Unfortunate Events Dinner


Chocolate Pudding - The Bad Beginning





Ingredients:
1 cup Sugar
1/2 cup Cocoa Powder
1/4 cup Cornstarch
1/2 teaspoon Salt
4 cups of Milk
2 tablespoons Butter
2 teaspoons of Vanilla

Directions:
Mix all of the dry ingredients together in a pot. Add Milk in and then set over stove on high. Once it has started to boil, take off of the stove and add in Butter and Vanilla. Put in refrigerator to cool.

Enchiladas with Red Tomato Sauce - The Vile Village 





Ingredients:
  • For the sauce:
  • 1 pound ripe tomatoes
  • 1 garlic clove skin on
  • 1 1/4 white onion about 1 ounce
  • 1 jalapeño 
  • 3/4 teaspoon kosher salt to taste
  • For the enchiladas:
  • Oil for frying the tortillas optional
  • 12 corn tortillas
  • 1/2 cup White Mexican Dipping Cheese
  • 1/2 cup queso fresco or cotija crumbled

Directions:
  • Place the tomatoes, garlic, onions, and chile on a medium baking dish, roasting pan or ovenproof skillet. Place them under a hot broiler and char the ingredients for about 9 to 10 minutes, turning them halfway through as the pieces brown thoroughly. 
  • Remove the skin from the garlic clove and discard. Place the garlic in the blender along with the tomatoes, onion, and chile and the salt. Purée until smooth, set aside.
  • In a large sauté pan, over medium heat you can lightly toast each tortilla on an already hot comal or skillet set over medium heat, for about 20 seconds per side.
  • Glide the tortillas through the salsa. Fold and then cover, generously, with more of the red sauce. Sprinkle with the crumbled cheese, and the Mexican Dipping Cheese.

Beatrice's Black Bean Mango Salad - The Slippery Slope




Ingredients:
  • 1 can black beans
  • 2 tbsp fresh cilantro, lightly packed
  • 2 stalks celery
  • 1 mango
  • 1/2 red bell pepper
  • For the Dressing: 
  • Juice from 1 lime
         1 tbsp extra virgin olive oil 
         1/4-1/2 tsp white balsamic vinegar
         1/8 tsp kosher salt
         Pepper
         1/2 tsp sugar or honey

Directions:
 For the salad just cut up the Cilantro, Celery, Mango, and Bell pepper. For the dressing mix all ingredients together.
